Chaga Thai Immunity Soup

This delicious immunity soup is packed with antioxidants, fresh greens, superfood mushrooms, & veggies to boost your energy & immune system.


I based the soup with powerful antioxidants; chaga tea, ginger, & turmeric, & added coconut aminos for extra taste. ✨


Chaga is a a rare medicinal mushroom that boost your immunity & reduces inflammation.

Ginger is a anti-inflammatory flowering plant that fights infections & helps digestion.

Turmeric is an anti-inflammatory spice that supports detoxification and balances blood sugar levels.

Coconut aminos is a soy & gluten free alternative to soy sauce, has 17 aminos acids, & is rich in B-Vitamins (73 % less sodium than soy sauce).




Ingredients
  • 2-3 pieces bok choy

  • 2-3 piece baby broccoli

  • 1 handful chopped kale

  • ½ cup snap peas

  • 1 1/2 cups mushrooms

  • ⅓ cup mung bean sprouts.

  • 1 7-ounce package organic soba noodles

  • ½ cup tofu

  • 2 Tbsp turmeric

  • 2 Tbsp cilantro

  • 5 cups chaga tea

  • 3-4 cups water

  • 1/2 teaspoon ground ginger

  • 4 tsp coconut aminos

  • salt to taste

  • 1/4 tsp fresh ground pepper


Directions
  1. Heat the water in large, heavy-bottomed stockpot over medium-low heat.

  2. Add in the chaga tea.

  3. Add the bok choy, mushrooms, ginger, and a pinch of salt let it be for approximately 5 to 6 minutes, stirring occasionally.

  4. Add the tofu, kale, and broccoli and continue to cook for 4 to 5 more minutes, stirring occasionally. Add 4 tbsp of coconut aminos mix and stir.

  5. Add the noodles

  6. Reduce the heat to low, cover, and cook until the vegetables are fork tender, approximately 10 minutes.

  7. Remove from heat and add the parsley,mung bean sprouts, and coconut aminos.

  8. Season, to taste, with pink salt and fresh ground pepper.

  9. Enjoy
