Jessica’s Favorite Combo


Loaded bowl filled with plant based goodies, nourishing your body could be a simple as this bowl.




Ingredients

  • 3-5 cups of mixed greens

  • 2 (4-ounce) salmon fillets, skin removed

  • ½ cup broccoli

  • ½ cup tomato

  • 1 date

  • Handful of green olives

  • 1 tbsp zaatar

  • 1 tbsp sumac

Directions

  1. Preheat the oven to 350°F. Line a baking sheet with aluminum foil.

  2. Rub salmon fillet with 1 tablespoon of the olive oil and season with salt. Bake salmon until cooked to your liking, about 20 minutes.

  3. In a salad bowl, whisk together the lemon juice and the extra-virgin olive oil.

  4. Add the broccoli, tomato, date, olives to bowl with the dressing.

  5. Enjoy
