Jessica’s Paleo Classic Combo

I don’t think I will ever tire of the classic egg white, avocado, & broccoli combo.


Ingredients
  • Gluten free spinach tortilla wrap

  • 1 slice paleo bread

  • ½ cup broccoli

  • 1/ 2 avocado, cut and cubed

  • 2 egg whites

  • 1 tsp. olive oil

Directions
  1. Heat oil in medium nonstick skillet over medium-low heat.

  2. Add spinach; cook, stirring frequently, for 3 to 4 minutes, or until wilted.

  3. Add egg whites.

  4. When eggs are almost set add broccoli; cook for 1 to 2 minutes, or until heated through.

  5. Mix together to make scrambled eggs
