Magical 4 Salad

This balanced salad will help you shut down your hunger hormones, feel more relaxed, and extremely food satisfied.




Ingredients
  • 3-5 cups of arugula

  • 1 cup farro

  • 1 cup bok choy

  • ½ cup fennel

  • 1 handful parsley

  • ½ tomato diced


Dressing:

  • 1/2 cup tahini.

  • ½ fresh lemon juice.

  • 1 tablespoon olive oil.

  • Pinch of salt to taste

  • Fresh ground black pepper


Directions
  1. Bring 2 cups of water and salt to a boil, then add farro

  2. Cover pot until farro absorbs all of the water, about 15 to 20 minutes (depends if your farro is pre cooked)

  3. Base the bowl with arugula, add in the farro, chopped bok choy, fennel, and tamato

  4. Drizzle it with parsley
