Saffron Salmon

An elegant meal for special guests or a romantic dinner for two, this saffron salmon dish is loaded with nutrition and flavor.

Ingredients
4 to 6 ounces fish of choice (salmon, halibut, sole)
½ cup capers
3-4 tablespoons olive oil
2 pinches saffron
1 handful of parsley
8 slices of fresh ginger
Directions
Preheat the oven to 350°F.
Using a sharp knife, make about 4-5 slices of salmon. Dab both sides of salmon dry with paper towels, season both sides with saffron, crushed black pepper, and parsley.
Meanwhile, in a small pan heat olive oil and cook capers. Stir for about 3 minutes.
Bake the salmon until cooked through, about 15 -30 minutes.
Once salmon is baked, top it off with crispy capers
