Zesty Quinoa Salad

This flavorful salad is packed with fresh greens, healthy fats, antioxidants, & plant-based protein to fuel and energize your body with an abundance of energy and vital nutrients.


Ingredients

3-5 cups arugula

1/2 cup quinoa, cooked

1/2 cup of cooked green peas

2 tbsp beets, shredded

1/ 2 avocado, sliced

1/4 cup walnuts

Dressing:

1/2 cup fresh lemon

1/2 cup olive oil

1 tsp pink himalayan salt

1/4 tsp fresh ground pepper

Directions

1. Bring 2 cups of water and salt to a boil, then add quinoa

2. Cover pot until quinoa absorbs all of the water, about 15 to 20 minutes

3. Once the quinoa is cooled add 2 tablespoons of shredded beets to the pot and mix

4. In a small bowl mix the lemon olive oil, salt, and pepper for the dressing

5. Place the arugula on a plate, add the quinoa, avocado, walnuts, and fresh peas

6. Enjoy
